1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini (sesame paste)

2 tablespoons soy sauce or tamari (to keep it gluten-free)

1 tablespoon maple syrup or honey (for sweetness)

1 tablespoon sriracha or your favorite hot sauce (adjust for spice preference)

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon fresh lemon juice

1/2 teaspoon ground cumin (for warmth)

Salt and black pepper to taste

8-10 large lettuce leaves (butter or romaine works well)

1/2 cup shredded carrots (for crunch)

1/2 cup diced cucumber (for freshness)

1/4 cup chopped fresh cilantro (for garnish)

1/4 cup chopped green onions (for flavor)

Sesame seeds (optional, for garnish)

Instructions
 

In a mixing bowl, combine the drained and rinsed chickpeas. Using a fork or a potato masher, lightly mash the chickpeas, leaving some whole to maintain a nice texture.

    In a separate bowl, whisk together the tahini, soy sauce (or tamari), maple syrup (or honey), sriracha, minced garlic, grated ginger, lemon juice, ground cumin, and a pinch of salt and black pepper. Mix until the sauce is smooth and well combined.

      Pour the spicy tahini sauce over the mashed chickpeas, gently mixing them together to ensure all chickpeas are evenly coated with the flavorful sauce.

        Prepare the lettuce leaves by washing them thoroughly and gently patting them dry with a paper towel.

          To assemble each lettuce wrap, place a generous spoonful of the spicy chickpea mixture in the center of a lettuce leaf. Top with a layer of shredded carrots, diced cucumber, and a sprinkle of chopped cilantro and green onions for added flavor and color.
