1 cup fresh strawberries, hulled and sliced

1/2 cup fresh mint leaves, tightly packed

1/4 cup granulated sugar

1/4 cup freshly squeezed lime juice (approximately 2 limes)

1 cup coconut water

1 cup Greek yogurt

1 tablespoon honey (optional for added sweetness)

Zest of 1 lime

Pinch of salt

Prepare the Strawberries: In a mixing bowl, combine the sliced strawberries with granulated sugar. Gently toss the strawberries until they are well coated with sugar. Allow them to sit for about 10 minutes at room temperature, during which time the sugar will draw out their juices, creating a delicious syrup.

    Create the Mint Lime Mixture: In a blender or food processor, add the tightly packed fresh mint leaves, freshly squeezed lime juice, coconut water, lime zest, and a pinch of salt. Process until the mixture is smooth and the mint is finely chopped, ensuring that the mint flavor is thoroughly infused into the mixture.

      Combine All Ingredients: In a large mixing bowl, combine the macerated strawberries along with their juices, Greek yogurt, and the mint-lime mixture. If you choose to add honey for extra sweetness, include it at this point. Gently fold the ingredients together until just combined, being careful not to overly mash the strawberries to maintain some texture.

        Mold the Mixture: Spoon the strawberry and yogurt mixture into silicone molds or ice cube trays, filling each cavity about three-quarters full to allow for expansion during freezing. For an extra tropical flair, you may place small mint leaves or additional strawberry slices on top of each cavity before freezing.

          Freeze: Place the filled molds in the freezer and allow them to Freeze for a minimum of 4 to 6 hours, or until completely solid.
