4 medium sweet potatoes

2 cups cooked and shredded chicken

1 cup of your favorite BBQ sauce

1 cup corn (fresh or canned, drained)

1 cup black beans, rinsed and drained

1 cup shredded cheddar cheese

1/2 cup red onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1 teaspoon olive oil

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for extra heat)

Sour cream (for topping, optional)

Preheat the Oven: Set your oven to preheat at 400°F (200°C) to ensure it's hot when the sweet potatoes are ready to bake.

    Prepare the Sweet Potatoes: Rinse the sweet potatoes under cool water and scrub them clean. Using a fork, prick each potato several times, which will allow steam to escape during cooking. Arrange them on a baking sheet lined with aluminum foil or parchment paper for easier cleanup.

      Roast the Sweet Potatoes: Bake the sweet potatoes in the preheated oven for 45-60 minutes. They are done when they are fork-tender and can be easily pierced. Keep in mind that the cooking time may vary depending on the size of the potatoes, so check on them periodically.

        Mix the BBQ Chicken Filling: In a medium bowl, combine the shredded chicken with the BBQ sauce, corn, black beans, garlic powder, smoked paprika, olive oil, and a pinch of salt and pepper. Mix thoroughly until all ingredients are well incorporated.

          Stuff the Potatoes: Once the sweet potatoes are fully cooked, remove them from the oven and allow them to cool slightly. Cut each sweet potato in half lengthwise and, using a fork, gently fluff the insides to create a nice base for the filling. Generously scoop the BBQ chicken mixture into the hollowed-out portions of each sweet potato half.
