4 large eggs

1 ripe avocado, peeled and pitted

1 tablespoon fresh lime juice

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (smoked or regular)

4 whole wheat or spinach tortillas

1 cup fresh spinach leaves

1/2 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese (optional)

Fresh cilantro or parsley for garnish (optional)

Prepare the Egg Mixture: In a medium bowl, crack the eggs and add salt, black pepper, and paprika. Whisk the mixture vigorously until fully combined and slightly frothy. Set the bowl aside while you prepare the other ingredients.

    Cook the Eggs: Heat a non-stick skillet over medium heat. Lightly grease the skillet with cooking spray or add a teaspoon of olive oil. Once heated, pour the egg mixture into the skillet. Using a spatula, gently scramble the eggs, stirring occasionally until they are just cooked through and fluffy, approximately 4 to 5 minutes. Remove the skillet from heat and set aside.

      Make the Avocado Spread: In a separate bowl, mash the ripe avocado with a fork until smooth but still slightly chunky. Pour in the lime juice and sprinkle a pinch of salt. Mix well until the ingredients are thoroughly combined, creating a creamy and zesty spread.
