1 cup cucumber, julienned

1 cup bell pepper (choose red, yellow, or orange), thinly sliced

1 cup carrots, grated

1 cup red cabbage, finely shredded

1 cup fresh mint leaves

1 ripe avocado, sliced

1/2 cup cream cheese, softened (or a vegan alternative)

Zest of 1 lime

Juice of 1 lime

Salt and pepper, to taste

1/4 cup sesame seeds (optional, for garnish)

Prepare the Filling: In a large mixing bowl, combine the julienned cucumber, thinly sliced bell pepper, grated carrots, shredded red cabbage, fresh mint leaves, fresh cilantro leaves, sliced avocado, softened cream cheese, lime zest, lime juice, and season with salt and pepper. Mix everything thoroughly until well combined, ensuring an even distribution of flavors.

    Soften the Rice Paper: Pour warm water into a shallow dish, ensuring it’s deep enough to fully submerge a rice paper wrapper.
