1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil, divided

1 bell pepper (any color), sliced into thin strips

1 cup sugar snap peas, trimmed and rinsed

1 cup pineapple chunks (canned or fresh, drained if canned)

½ cup red onion, sliced thinly

2 cloves garlic, minced

1-inch piece of fresh ginger, grated

¼ cup soy sauce

¼ cup cider vinegar

2 tablespoons brown sugar

1 tablespoon ketchup

1 teaspoon sesame oil

Salt and pepper to taste

Sesame seeds and sliced green onions for garnish

Instructions
 

Prepare the Tofu: Begin by pressing the tofu for at least 15 minutes to eliminate excess moisture. After pressing, cut the tofu into bite-sized cubes. In a medium bowl, carefully toss the tofu cubes with cornstarch until they are evenly coated.

    Fry the Tofu: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once the oil is hot, add the cornstarch-coated tofu cubes. Fry the tofu, turning occasionally, until all sides are golden brown and crispy, approximately 8-10 minutes. Once cooked, transfer the tofu to a plate and set aside.

      Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced red onion and sauté for 2-3 minutes until it begins to soften. Next, add the sliced bell pepper, sugar snap peas, minced garlic, and grated ginger. Stir-fry the vegetables for an additional 4-5 minutes, or until they are crisp-tender and vibrant in color.

        Make the Sweet and Sour Sauce: In a small bowl, whisk together the soy sauce, cider vinegar, brown sugar, ketchup, and sesame oil until the mixture is smooth and the sugar is dissolved.

          Combine Everything: Return the crispy tofu to the skillet with the sautéed vegetables. Pour the prepared sweet and sour sauce over the tofu and vegetables. Gently toss to combine, cooking for an additional 2-3 minutes, allowing the dish to heat through and the flavors to meld beautifully.

            Season and Serve: Taste the stir fry and adjust the seasoning with salt and pepper as needed. Once everything is well incorporated, remove from heat. Serve immediately, garnished with a sprinkle of sesame seeds and sliced green onions for a fresh touch.
