Ingredients

1 pound boneless, skinless chicken thighs

1 cup fresh pineapple chunks (or canned, drained)

1/2 cup bell pepper (choose red or yellow), sliced

1/2 cup onion, sliced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup low-sodium soy sauce

1/4 cup honey

2 tablespoons sriracha sauce (adjust to taste depending on your spice preference)

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water (to thicken the sauce)

2 tablespoons vegetable oil (for cooking)

Salt and pepper to taste

Chopped green onions and sesame seeds for garnish

Instructions

Marinate the Chicken: In a spacious bowl, whisk together the soy sauce, honey, sriracha, rice vinegar, minced garlic, and minced ginger. Add the chicken thighs, ensuring they are fully coated in the marinade. Cover the bowl and let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator for a deeper flavor.

Prepare the Vegetables: While the chicken is marinating, wash and slice the bell pepper and onion. Set the sliced vegetables aside for later use.

Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the marinated chicken from the bowl (make sure to reserve the marinade for later) and season it with salt and pepper. Place the chicken in the hot skillet, cooking for approximately 5-7 minutes on each side, or until it turns golden brown and is cooked through. Once done, transfer the chicken to a plate and let it rest.

Stir-Fry the Vegetables: Using the same skillet, add the sliced onion and bell pepper to the leftover oil. Stir-fry the vegetables for about 3-4 minutes, or until they start to soften and become fragrant.

Add Pineapple and Sauce: Incorporate the pineapple chunks into the skillet, followed by the reserved marinade. Bring the mixture to a gentle simmer and then stir in the cornstarch slurry. Allow the sauce to bubble for 2-3 minutes, stirring frequently until it thickens.

Combine and Serve: Slice the rested chicken into strips and return it to the skillet, mixing it with the pineapple sauce and vegetables. Toss everything together to ensure the chicken is well coated in the delicious sauce.

Garnish and Plate: Remove the skillet from heat. Serve your Sweet and Spicy Pineapple Chicken over a bed of rice or noodles, and finish with a sprinkle of chopped green onions and sesame seeds for added flavor and crunch.
