4 slices of bacon, chopped

1 cup fresh sweet corn (or frozen corn, thawed)

1 small onion, finely chopped

2 garlic cloves, minced

1 jalapeño, seeded and finely diced (optional, for heat)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

½ cup milk (whole or 2%)

1 teaspoon smoked paprika

1 teaspoon ground cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips or fresh veggies (for serving)

Carefully remove the bacon using a slotted spoon and let it drain on a plate lined with paper towels. Keep the rendered bacon grease in the skillet for flavor.
