Ingredients

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (canned, drained can be used as a substitute)

1/2 cup bell pepper, diced (choose red or yellow for a pop of color)

1/4 cup red onion, finely diced

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup low-sodium soy sauce

1/4 cup honey

1 tablespoon rice vinegar

2 teaspoons cornstarch mixed with 2 tablespoons cold water (for thickening)

2 tablespoons sesame oil

1 tablespoon sesame seeds (optional for garnish)

Fresh cilantro or green onions, chopped for garnish

Instructions

Marinate the Chicken: In a mixing bowl, whisk together the soy sauce, honey, rice vinegar, minced garlic, and ginger until well combined. Add the bite-sized pieces of chicken to the bowl, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (or up to 2 hours) to enhance the flavor.

Prepare the Stir-Fry: In a large skillet or wok, heat the sesame oil over medium-high heat. When the oil shimmers, add the marinated chicken pieces (reserve the marinade). Cook the chicken for 5-7 minutes, stirring frequently, until it is cooked through and has a beautiful golden brown color.

Add Vegetables and Pineapple: Stir in the diced bell pepper, red onion, and fresh pineapple chunks. Continue stir-frying for an additional 3-4 minutes until the vegetables soften but retain a little crunch.

Thicken the Sauce: Lower the heat slightly, then pour the reserved marinade into the skillet, followed by the cornstarch slurry (the cornstarch mixed with cold water). Stir continuously for about 2-3 minutes until the sauce thickens and beautifully glazes the chicken and vegetables.

Serve: Remove the skillet from the heat. Serve the Sweet Pineapple Chicken Bites warm over a bed of steamed rice or quinoa. For an elegant touch, garnish each serving with a sprinkle of sesame seeds and a handful of fresh cilantro or sliced green onions.
