Sweet Potato Egg and Cheese Burritos

2 medium-sized sweet potatoes, peeled and diced

4 large eggs

1/2 cup shredded sharp cheddar cheese

1/4 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 large flour tortillas

2 tablespoons olive oil

1/4 cup chopped fresh cilantro (optional)

Salsa or hot sauce for serving (optional)

Instructions
 

Cook the Sweet Potatoes: In a medium-sized pot, bring enough water to cover the diced sweet potatoes to a boil. Once boiling, add the sweet potatoes and cook for 10-12 minutes, or until fork-tender. Drain the sweet potatoes thoroughly and set them aside.

    Sauté the Sweet Potatoes: Heat olive oil in a large skillet over medium heat. Add the boiled sweet potatoes to the skillet. Season with garlic powder, onion powder, salt, and freshly cracked pepper. Sauté for about 5-7 minutes, stirring occasionally, until the sweet potatoes gain a slight caramelization and develop a golden crust. Remove the skillet from heat and set aside.

      Prepare the Egg Mixture: In a mixing bowl, crack in the eggs and add the milk, along with a pinch of salt and pepper. Whisk the mixture until it's well combined and frothy. Return the skillet to medium heat, then pour in the egg mixture. Cook gently, stirring continuously until the eggs are fluffy and fully cooked, which should take about 3-5 minutes.

        Combine Ingredients: Once the eggs are perfectly cooked, gently fold in the sautéed sweet potatoes and half of the shredded cheddar cheese. Mix until the cheesy egg and sweet potato filling is evenly combined and heated through.
