Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

Salt and pepper, to taste

1 cup canned black beans, rinsed and drained

1 cup corn kernels (either fresh or frozen)

1 cup cherry tomatoes, halved

1 avocado, diced

1 jalapeño, sliced (optional for heat)

1 cup shredded cheddar cheese (or dairy-free cheese alternative)

1/4 cup sour cream (or Greek yogurt)

Fresh cilantro, chopped, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven: Start by preheating your oven to 400°F (200°C) to ensure it is at the right temperature for baking.

Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly, then peel them. Slice them into thin rounds, aiming for about 1/4 inch in thickness to promote crispiness during baking.

Season and Coat: In a large mixing bowl, add the sliced sweet potatoes along with olive oil, smoked paprika, garlic powder, ground cumin, and a generous pinch of salt and pepper. Toss the slices well, ensuring they are evenly coated with the seasoning mixture.

Arrange on Baking Sheet: Line a large baking sheet with parchment paper. Spread the seasoned sweet potato slices in a single layer on the sheet, making sure none of them overlap for optimal cooking.

Bake the Sweet Potatoes: Place the baking sheet in the preheated oven and bake for 25-30 minutes. About halfway through, flip the sweet potato slices to ensure they crisp up evenly. They should be golden and crispy around the edges by the end of the baking time.

Build the Nachos: Once the sweet potatoes are baked to crispy perfection, take them out of the oven. On a large oven-safe serving dish or another baking sheet, create an appealing layer with the sweet potato slices as your base. Top with even layers of black beans, corn, cherry tomatoes, sliced jalapeños (if using), and a generous sprinkle of shredded cheese.

Melt the Cheese: Return the loaded nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly, creating a delicious topping for your nachos.

Top and Serve: Carefully remove the nachos from the oven. Immediately top them with diced avocado, a dollop of sour cream, and a sprinkle of chopped cilantro for freshness. Serve the nachos hot with lime wedges on the side to add a zesty kick during enjoyment.
