Ingredients

1 lb (450g) boneless chicken breasts, thinly sliced into strips

1 cup fresh pineapple, diced into bite-sized pieces

1 red bell pepper, sliced into strips

1 yellow bell pepper, sliced into strips

1 small red onion, thinly sliced

3 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

2 tablespoons vegetable oil

1/4 cup soy sauce

2 tablespoons honey

1 tablespoon sriracha sauce (adjust according to your spice preference)

1 tablespoon cornstarch, mixed with 2 tablespoons water to form a slurry

Salt and pepper, to taste

1/4 cup green onions, chopped (for garnish)

Cooked jasmine rice or rice noodles, for serving

Instructions

Prepare the Marinade: In a medium mixing bowl, whisk together the soy sauce, honey, sriracha sauce, and a pinch of salt and pepper. Add the sliced chicken to the marinade, ensuring it's well coated. Allow the chicken to marinate for at least 15 minutes to enhance the flavors.

Heat the Oil: In a large skillet or wok, pour in the vegetable oil and heat it over medium-high flame until it shimmers slightly, indicating that it's hot enough for cooking.

Cook the Chicken: Carefully add the marinated chicken strips to the skillet, spreading them out into a single layer. Sauté the chicken for about 5-7 minutes, stirring occasionally, until it is fully cooked through and exhibits a light caramelization. Once cooked, remove the chicken from the skillet and set it aside on a plate.

Sauté the Vegetables: In the same skillet, add a touch more oil if needed. Toss in the sliced red onion and bell peppers, frying them for 2-3 minutes until they begin to soften. Next, add the minced garlic and ginger, continuing to stir-fry for an additional minute until they release their aromatic fragrance.

Combine All Ingredients: Return the cooked chicken to the skillet with the sautéed vegetables. Add in the diced pineapple and the cornstarch slurry. Stir everything together thoroughly, allowing it to cook for an additional 2-3 minutes. This will help the sauce to thicken and envelop the chicken and vegetables evenly.

Taste and Adjust Seasoning: Give the stir-fry a taste and adjust the flavors as needed. Add more sriracha for an extra kick or a drizzle of honey for added sweetness, based on your preference.

Serve with Style: Remove the pan from the heat and transfer the stir-fry to a serving plate. Garnish generously with freshly chopped green onions. Serve your vibrant dish hot over cooked jasmine rice or rice noodles, making it a delightful and colorful meal.
