  • 0.5 lb sweet potatoes, peeled and cubed
  • 1.0 cup fresh or frozen cranberries
  • 0.5 cup oats
  • 0.25 cup almond flour
  • 0.25 cup maple syrup
  • 1.0 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup chopped walnuts or pecans
  • 0.0 spray cooking spray or olive oil

Instructions
 

  • Preheat the oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper or spray it with cooking spray.
  • Cook the sweet potatoes: Boil the cubed sweet potatoes in a large pot of salted water for about 15 minutes, or until they are fork-tender. Drain and let cool slightly.
  • Mash the sweet potatoes: In a large mixing bowl, mash the cooked sweet potatoes until smooth. Make sure there are no lumps.
  • Add in the cranberries: If using fresh or frozen cranberries, chop them roughly. If using dried cranberries, chop them a bit to facilitate blending. Fold the cranberries into the mashed sweet potatoes.
  • Mix the dry ingredients: In a separate bowl, combine the oats, almond flour, cinnamon, nutmeg, salt, and black pepper. Ensure that they are well-mixed.
  • Combine everything: Slowly stir the dry mixture into the sweet potato and cranberry combination. Add the maple syrup and mix until well combined. If desired, fold in the chopped nuts for added texture.
  • Form the nuggets: Using your hands or a cookie scoop, form small nugget-shaped patties from the mixture and place them on the lined baking sheet. Aim for about 1-2 inches in size.
  • Bake the nuggets: Lightly spray the tops of the nuggets with cooking spray or brush with olive oil. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy on the outside.
