1.5 lbs sirloin steak, cut into 1-inch cubes

2 teaspoons smoked paprika

Salt and freshly ground black pepper, to taste

1 tablespoon balsamic vinegar

8 wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes to prevent burning)

1/2 cup unsalted butter, softened to room temperature

Zest and juice of 1 large lemon

Marinate the Steak: In a large mixing bowl, whisk together the olive oil, minced garlic, chopped rosemary, chopped thyme, smoked paprika, salt, pepper, and balsamic vinegar until thoroughly combined. Add the sirloin steak cubes to the marinade, tossing gently to ensure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or preferably up to 2 hours to enhance the flavors.

    Prepare the Herb Butter: In a small mixing bowl, blend the softened butter with the lemon zest, lemon juice, a pinch of salt, and pepper. Mix until all ingredients are evenly incorporated.
