1 block (14 oz) extra-firm tofu, thoroughly pressed and drained

1/4 cup extra virgin olive oil

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon freshly ground black pepper

1 teaspoon sea salt

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon dried oregano

1/2 cup panko breadcrumbs

Fresh herbs (parsley and chives), finely chopped for garnish

Lemon wedges, for serving

Prepare the Tofu: Begin by pressing the tofu to eliminate excess moisture, which typically takes about 30 minutes. Once the tofu is pressed, carefully slice it into 1-inch thick steaks.

    Marinate the Tofu: In a shallow dish large enough to accommodate the tofu, combine the olive oil, soy sauce, apple cider vinegar, garlic powder, onion powder, smoked paprika, black pepper, salt, thyme, rosemary, and oregano. Whisk these ingredients together until well blended. Immerse the tofu steaks in the marinade, making sure they are thoroughly coated. Allow the tofu to marinate for at least 30 minutes, or for a richer flavor, refrigerate and let it marinate overnight.

      Preheat the Oven: While the tofu is marinating, preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

        Coat the Tofu: In a shallow bowl, evenly spread the panko breadcrumbs. Once your tofu has marinated, take each steak out and let any excess marinade drip off. Press each side of the tofu into the panko breadcrumbs to create a golden crust, ensuring they are fully coated.
