Tex-Mex Ground Turkey Rice Bowls

Ingredients
  

1 lb ground turkey

1 cup brown rice (uncooked)

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (frozen or fresh)

1 bell pepper (any color), diced

1 small onion, diced

2 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup diced tomatoes (fresh or canned)

1 avocado, diced

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro for garnish

Lime wedges for serving

Instructions
 

Cook the Rice: In a medium saucepan, bring 2 cups of water to a rolling boil. Add the brown rice, stir briefly, then cover and reduce the heat to low. Allow it to simmer gently for about 45 minutes, or until the rice is tender and the water is fully absorbed. Once cooked, remove from heat and let it rest, covered, for an additional 10 minutes. Fluff the rice with a fork before serving.

    Prepare the Turkey Mixture: While the rice is cooking, place a large skillet over medium heat and add the olive oil. Once hot, add the diced onion and bell pepper. Sauté for about 5 minutes or until they have softened and become fragrant. Next, stir in the minced garlic and cook for another minute, allowing the garlic to become aromatic.

      Cook the Ground Turkey: Add the ground turkey to the skillet, using a spatula to break it apart into smaller pieces. Cook for approximately 6-8 minutes, stirring occasionally, until the turkey is completely browned and no longer pink.

        Season the Mixture: Once the turkey is cooked through, sprinkle in the chili powder, cumin, smoked paprika, and a pinch of salt and pepper. Stir well to combine. Add the diced tomatoes, black beans, and corn to the mixture. Cook for another few minutes, stirring frequently, until everything is heated through and flavors meld together.

          Assemble the Bowls: To serve, take four bowls and start with a generous scoop of brown rice at the bottom of each. Layer the turkey mixture over the rice. Add a handful of diced avocado on top, followed by a sprinkling of your chosen shredded cheese.
