Ingredients

2 cups cooked jasmine rice (preferably chilled day-old)

1 cup fresh crab meat (lump or claw meat)

2 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, finely diced

1 red bell pepper, diced

2 green onions, sliced (keep white and green parts separate)

1 small carrot, diced

2 eggs, lightly beaten

3 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon oyster sauce

1 teaspoon sugar

1 tablespoon lime juice

Fresh cilantro leaves for garnish

Sliced cucumber and lime wedges for serving

Chili flakes or Sriracha (optional for heat)

Instructions

Prepare the Rice: If you haven't prepared it in advance, cook jasmine rice according to package instructions and let it cool completely. Using chilled day-old rice is recommended to prevent the final dish from becoming mushy.

Heat the Oil: In a large wok or non-stick skillet, add vegetable oil and heat it over medium-high until it shimmers, ensuring the pan is hot enough to create a nice stir-fry.

Sauté Aromatics: Introduce the minced garlic and diced onion into the hot oil. Stir-fry for 1-2 minutes, allowing the onion to become translucent and the garlic to release its fragrance.

Add Vegetables: Mix in the diced red bell pepper and carrot, continuing to stir-fry the vegetables for an additional 3-4 minutes. You're aiming for a tender yet crisp texture.

Cook the Eggs: Create space in the pan by pushing the vegetables to one side. Pour the beaten eggs into the open area and scramble them until fully cooked. Once cooked, combine the eggs with the vegetable mixture.

Combine Rice and Crab: Next, add the prepared jasmine rice and fresh crab meat to the wok. Use a spatula to break up any rice clumps, ensuring that the crab is evenly distributed among the rice.

Season the Rice: In a small bowl, whisk together the soy sauce, fish sauce, oyster sauce, sugar, and lime juice. Pour this sauce mixture over the rice and stir thoroughly, making sure each grain of rice is well-coated with flavor.

Add Green Onions: Toss in the white parts of the sliced green onions, mixing them in for about 1-2 minutes until everything is heated through.

Final Touches: Taste the fried rice and adjust seasonings if necessary. For an added kick, feel free to sprinkle some chili flakes or drizzle with Sriracha according to your heat preference.

Serve: Transfer the fried rice to individual plates or a large serving dish and garnish with fresh cilantro and the remaining green onions. Serve hot, accompanied by sliced cucumber and lime wedges for a refreshing contrast.
