1/2 cup coffee liqueur (like Kahlua, optional)

For the Cake:

2 cups all-purpose flour

1 1/2 cups granulated sugar

1/2 cup unsweetened cocoa powder

1 tablespoon baking powder

1/2 teaspoon salt

4 large eggs, at room temperature

1 cup whole milk

1/2 cup vegetable oil

2 teaspoons vanilla extract

For the Mascarpone Frosting:

8 oz mascarpone cheese, at room temperature

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

For the Garnish:

Unsweetened cocoa powder, for dusting the top

Dark chocolate shavings or curls, for decoration

Instructions

Prepare the Coffee Mixture: In a medium bowl, combine the cooled espresso and coffee liqueur, mixing well. Set aside to allow the flavors to meld.

Make the Cake Batter: Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans, or line them with parchment paper for easier removal. In a large mixing bowl, whisk together the flour, granulated sugar, cocoa powder, baking powder, and salt until evenly combined. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract until smooth. Gradually pour the wet mixture into the dry ingredients, stirring until just combined—avoid overmixing.

Bake the Cakes: Divide the batter evenly among the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once baked, let the cakes cool in the pans for about 10 minutes, then gently turn them out onto wire racks to cool completely.

Prepare the Frosting: In a mixing bowl, beat the mascarpone cheese with an electric mixer on low speed until smooth and creamy. In another mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form. Carefully fold the whipped cream into the mascarpone cheese until fully blended, taking care not to deflate the mixture.

Assemble the Cake: Once the cakes are completely cooled, use a serrated knife to slice each cake in half horizontally, creating a total of six layers. Place the first layer on a serving platter. Generously brush the top with the coffee mixture, allowing it to soak in slightly. Spread a thick layer of mascarpone frosting over the cake, then add the next layer on top and repeat the process—brush, frost, layer—until all layers are stacked. Finish with a final layer of mascarpone frosting on top.

Decorate: Use any leftover frosting to cover the sides of the cake smoothly. Dust the top with a light coating of cocoa powder, and embellish with dark chocolate shavings or curls for an elegant finish.

Chill and Serve: For optimal flavor, refrigerate the cake for a minimum of 4 hours (or overnight, if time allows) to let the flavors develop. When ready to serve, slice the cake into portions and enjoy this indulgent dessert chilled!

                Prep Time: 30 mins | Total Time: 5 hours | Servings: 12

Presentation Tips: Consider serving each slice on a decorative plate, alongside a fresh espresso or a dollop of whipped cream for an extra touch. Enjoy!
