Tofu Tacos with Cherry Slaw

1 block firm tofu, thoroughly drained and pressed

2 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon ground cumin

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 small corn tortillas

1 cup red cherries, pitted and halved

1 cup red cabbage, finely sliced

1/4 cup fresh cilantro, chopped

2 tablespoons apple cider vinegar

1 tablespoon honey or agave syrup

1 ripe avocado, sliced

Lime wedges, for serving

Instructions
 

Prepare the Tofu: Begin by draining the tofu and pressing it to remove excess moisture, which helps in achieving a crisp texture. Once pressed, cut the tofu into small, bite-sized cubes.

    Season the Tofu: In a large mixing bowl, combine the tofu cubes with olive oil, chili powder, cumin, garlic powder, salt, and pepper. Toss the mixture gently until each cube is evenly coated with the seasoning.

      Cook the Tofu: Preheat a non-stick skillet over medium-high heat. Add the seasoned tofu cubes to the skillet and cook for approximately 8-10 minutes. Stir occasionally to ensure even cooking, until the tofu turns golden brown and crispy all around. Once done, remove from heat and set aside.

        Prepare the Cherry Slaw: In a separate bowl, combine the halved red cherries, sliced red cabbage, and chopped cilantro. Drizzle with apple cider vinegar and honey (or agave syrup), then toss everything together until well mixed. Let the mixture sit for about 10 minutes to allow the flavors to meld beautifully.

          Warm the Tortillas: In a dry skillet or directly over a stovetop flame, warm each corn tortilla for about 30 seconds on each side, or until they become pliable and slightly toasted.

            Assemble the Tacos: For each warmed tortilla, place a generous portion of the crispy tofu in the center. Top with a spoonful of the cherry slaw and a few slices of creamy avocado.
