Turkey Chili and Cheese Mini Sliders

1 pound ground turkey

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

1 small onion, finely chopped

2 cloves garlic, minced

1 cup bell peppers (red and green), finely diced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

½ cup shredded cheddar cheese

12 mini slider buns

Sour cream and chopped green onions for garnish

Instructions
 

Cook the Turkey: In a large skillet, heat over medium heat the ground turkey. Cook for approximately 6-8 minutes, breaking it apart with a spatula as it browns and fully cooks. Once cooked, drain any excess fat if necessary.

    Sauté the Vegetables: Add the finely chopped onion, minced garlic, and diced bell peppers to the skillet with the turkey. Sauté the mixture for about 5 minutes, or until the vegetables are soft and fragrant.

      Add the Seasonings: Sprinkle in the chili powder, ground cumin, smoked paprika, salt, and black pepper. Stir the mixture well and let it cook for an additional minute to allow the spices to release their flavor.

        Incorporate Beans and Tomatoes: Pour in the drained black beans and the can of diced tomatoes (including their juices). Mix everything thoroughly and bring the mixture to a gentle simmer. Reduce the heat and let it simmer uncovered for about 10-15 minutes, occasionally stirring, until the chili thickens slightly.

          Melt the Cheese: Stir in half of the shredded cheddar cheese into the chili mixture until it is melted and fully incorporated.

            Prepare the Slider Buns: Preheat your oven to 350°F (175°C). Arrange the mini slider buns on a baking sheet. Lightly toast them in the oven for about 5 minutes, or until they are warmed and have a slight crispness.
