2 medium cucumbers, peeled and diced

1 cup crumbled feta cheese

¼ cup red onion, finely chopped

2 tablespoons balsamic vinegar

1 tablespoon honey

Salt and freshly ground black pepper, to taste

Optional: 1 tablespoon freshly squeezed lemon juice for added brightness
