Juice of 1 lime

4 large flour tortillas

1 cup shredded cheese (cheddar or Mexican blend works well)

Fresh cilantro, chopped, for garnish

Sour cream, guacamole, or salsa, for serving

Marinate the Chicken: In a medium mixing bowl, combine the thinly sliced chicken breasts with 1 tablespoon of olive oil, minced garlic, chili powder, cumin, smoked paprika, lime juice, and a generous pinch of salt and pepper. Mix thoroughly to ensure all pieces are evenly coated in the marinade. Cover and let it marinate for at least 15 minutes while you prepare the vegetables.

    Cook the Vegetables: In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Once hot, add the sliced onions, red bell pepper, and green bell pepper. Sauté the vegetables for about 5-7 minutes, stirring frequently, until they are tender and begin to caramelize slightly. Season with salt and pepper to taste. Once cooked, transfer the vegetables to a plate and keep them warm.
