2 tablespoons extra virgin olive oil

1 cup of your favorite BBQ sauce

1 cup shredded sharp cheddar cheese

4 large whole wheat or spinach wraps

1 cup shredded crisp lettuce

½ cup diced ripe tomatoes

¼ cup sliced fresh green onions

Optional: slices of creamy avocado for garnish

Preheat the oven: Begin by preheating your oven to 400°F (200°C), ensuring it’s hot enough to roast the cauliflower perfectly.

    Prepare the cauliflower: In a large mixing bowl, combine the cauliflower florets with the extra virgin olive oil, smoked paprika, garlic powder, onion powder, chili powder, along with a generous pinch of salt and freshly ground black pepper. Toss them well until all the florets are evenly coated in the seasoning blend.

      Roast the cauliflower: Transfer the seasoned cauliflower onto a large baking sheet, spreading the florets out in a single layer for even roasting. Place it in the preheated oven and roast for approximately 20-25 minutes. Make sure to stir the florets halfway through cooking so they brown evenly, until they are tender and lightly browned.
