1 cup corn kernels (can be fresh, frozen, or canned)

1 medium red onion, finely chopped

1 red bell pepper, diced into small pieces

1 clove garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Juice of 1 fresh lime

Salt and freshly ground black pepper, to taste

8 small corn or flour tortillas

1 ripe avocado, diced

Fresh cilantro, chopped, for garnish

Salsa or hot sauce (optional, for serving)

Sauté the Vegetables: Begin by heating a tablespoon of olive oil in a large skillet over medium heat. Once the oil is shimmering, add the finely chopped red onion and diced red bell pepper. Sauté for approximately 5 minutes, or until the onion becomes soft and translucent, stirring frequently to prevent burning.

    Add Garlic and Spices: Next, incorporate the minced garlic, ground cumin, smoked paprika, and chili powder into the skillet.
