3 medium zucchinis, thinly sliced lengthwise (about 1/8 inch thick)

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg, lightly beaten

2 cloves garlic, minced

1 tablespoon fresh basil, chopped (or 1 teaspoon dried basil)

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

Olive oil for drizzling

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking.

    Prepare the Zucchini: Using a mandoline slicer or a sharp knife, cut the zucchinis lengthwise into thin strips. Arrange the slices on a baking sheet lined with paper towels, sprinkle them lightly with salt, and allow them to rest for approximately 15 minutes. This process will help draw out excess moisture.

      Make the Filling: In a medium mixing bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, lightly beaten egg, minced garlic, chopped basil, salt, and black pepper. Stir the mixture until it is smooth and creamy, ensuring all the ingredients are well integrated.

        Cook the Zucchini: After 15 minutes, gently blot the zucchini slices with another paper towel to remove excess moisture. In a large skillet, drizzle a bit of olive oil and heat over medium. Sauté the zucchini slices for about 1-2 minutes on each side until they are just tender yet still firm. Remove them from the skillet and allow them to cool slightly.

          Assemble the Roll-Ups: In the bottom of a baking dish (approximately 9x13 inches), spread about 1 cup of marinara sauce in an even layer. Take one zucchini slice, and at one end, place approximately a tablespoon of the ricotta filling. Tightly roll the zucchini around the filling and place it seam-side down in the baking dish. Repeat this rolling process until all zucchini slices have been filled and placed in the dish.

            Top with Sauce and Cheese: Once all the roll-ups are arranged in the dish, pour the remaining marinara sauce over the top to cover all the rolls. Then, sprinkle the remaining shredded mozzarella and grated Parmesan cheese over the sauce for an extra cheesy finish.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. After 25 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese has melted and turned a lovely golden brown.
