2 medium zucchinis, finely chopped

1 medium onion, chopped

2 cloves garlic, minced

1 medium carrot, finely diced

1 bell pepper (any color), diced

1 can (14 oz) crushed tomatoes

1 cup vegetable broth

1 tablespoon tomato paste

1 tablespoon olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

400g pasta (spaghetti or your choice)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions
 

Prepare the Pasta: In a large pot, bring salted water to a vigorous boil. Add the pasta of your choice and cook according to the package instructions until al dente. Once cooked, drain it well and set aside.

    Sauté the Vegetables: In a large skillet or saucepan, heat the olive oil over medium heat. Add the chopped onions and sauté for 3-4 minutes until they become translucent and fragrant.

      Add Garlic and Other Veggies: Stir in the minced garlic, finely diced carrots, and bell pepper. Continue to cook for another 5 minutes, stirring occasionally, until all the vegetables are tender and softened.

        Incorporate Zucchini: Add the finely chopped zucchinis to the skillet. Sauté for an additional 5-7 minutes, stirring occasionally, until the zucchini becomes tender and starts to release its natural moisture.
