2 medium zucchinis, grated

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

½ cup cream cheese, softened

1 cup milk

½ teaspoon paprika

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

½ cup breadcrumbs (optional for topping)

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente, usually about 8-10 minutes. Drain the pasta and set it aside.

    Sauté the Zucchini: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for approximately 3-4 minutes, or until the onion becomes translucent. Season the mixture with salt and pepper to taste.
