Ingredients

1 medium zucchini, finely grated and excess moisture squeezed out

1 pound ground turkey or chicken

1/2 cup whole wheat breadcrumbs

1/4 cup freshly grated Parmesan cheese

1/4 cup fresh parsley, finely chopped

2 garlic cloves, minced

1 teaspoon dried oregano

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 large egg

Olive oil spray or 2 tablespoons extra virgin olive oil for grilling

1 cup marinara sauce (for dipping)

Skewers (metal or soaked wooden skewers)

Instructions

Preheat the Grill: Preheat your grill or grill pan to medium heat. If using a grill pan, lightly oil the grates to prevent sticking.

Prepare the Meatball Mixture: In a large mixing bowl, combine the finely grated zucchini, ground turkey (or chicken), whole wheat breadcrumbs, grated Parmesan cheese, chopped parsley, minced garlic, dried oregano, smoked paprika, salt, black pepper, and the egg. Using your hands or a spatula, mix thoroughly until all ingredients are well incorporated.

Form Meatballs: Take small portions of the mixture and roll them into meatballs about 1 inch in diameter. You should yield approximately 16-20 meatballs, depending on the size.

Assemble the Skewers: Carefully thread the meatballs onto the skewers. Ensure to leave space between each meatball to allow for even cooking. For added color and flavor, consider alternating the meatballs with slices of bell pepper or cherry tomatoes.

Grill the Skewers: Lightly spray the skewers with olive oil. Place the skewers on the preheated grill and cook for 10-12 minutes. Turn them occasionally to achieve an even golden brown color. Ensure that the internal temperature of the meatballs reaches at least 165°F (75°C) for safe consumption.

Serve with Marinara: Once cooked, remove the skewers from the grill and allow them to rest for a minute before serving. Present them warm with a side of marinara sauce for dipping.

Enjoy: Relish your flavorful Zucchini Meatball Skewers as an enticing appetizer, a delightful snack, or a satisfying main dish accompanied by a fresh salad!
