Ingredients

2 medium zucchinis, spiralized into noodles

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and black pepper, to taste

1 cup romaine lettuce, chopped into bite-sized pieces

1/4 cup grated Parmesan cheese, plus extra for serving

1/4 cup cherry tomatoes, halved

1/4 cup Caesar dressing (store-bought or homemade)

2 tablespoons fresh parsley, chopped, for garnish

Optional: croutons for added crunch

Instructions

Prepare the Chicken:

    - Begin by preheating your grill or skillet to medium-high heat. While it's heating, brush the chicken breasts with olive oil and season generously with salt and black pepper.

      - Cook the chicken for approximately 6-7 minutes on each side, or until it is fully cooked through and the internal temperature reaches 165°F (75°C). Once done, remove the chicken from the heat and let it rest for 5 minutes before slicing into thin strips.

        Spiralize the Zucchini:

          - Use a spiralizer to turn the zucchinis into noodles. If you don't have a spiralizer, a vegetable peeler can be used to create thin ribbons, or you can opt for pre-spiralized zucchini available at some grocery stores.

            Sauté the Zoodles (Optional):

              - If you prefer warm zucchini noodles, heat a non-stick skillet over medium heat and sauté the spiralized zucchini for 2-3 minutes. Lightly season the noodles with salt and black pepper. If you enjoy them raw, you can skip this step entirely.

                Assemble the Salad:

                  - In a large mixing bowl, combine the spiralized zucchini noodles, chopped romaine lettuce, sliced chicken, halved cherry tomatoes, and the 1/4 cup of grated Parmesan cheese.

                    Dress the Salad:

                      - Drizzle your choice of Caesar dressing over the salad ingredients and toss gently to ensure everything is well coated. Taste and adjust the seasoning with additional salt and pepper if necessary.

                        Serve & Garnish:

                          - Divide the salad between serving plates. Top with extra grated Parmesan cheese, a sprinkle of chopped parsley, and add croutons if desired for extra texture. Enjoy your fresh and zesty salad immediately!
