2 large zucchini, sliced into 1/4-inch thick rounds

1 cup shredded mozzarella cheese

1/2 cup marinara sauce

1/4 cup sliced pepperoni (or your preferred toppings)

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

4 slices of sourdough bread (or your choice of bread)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Zucchini: Begin by preheating your grill or skillet to medium heat. While it's heating, season the zucchini rounds with salt and pepper. Grill each round for approximately 2-3 minutes on each side until they are tender and display nice grill marks. Once done, set them aside off the heat.

    Make the Cheese Mixture: In a medium-sized bowl, mix together the shredded mozzarella cheese, Italian seasoning, and garlic powder. Stir until the seasonings are well incorporated throughout the cheese.

      Assemble the Sandwich: Take a slice of sourdough bread and generously spread marinara sauce over one side. Layer on some of the grilled zucchini rounds and a few slices of pepperoni. Top this with a generous sprinkling of the cheese mixture.

        Top It Off: Place another slice of sourdough bread on top of the assembled toppings to complete the sandwich. Repeat the assembly process for the second sandwich.

          Grill the Sandwiches: In your preheated skillet, heat the olive oil until shimmering. Carefully place the assembled sandwiches in the skillet.
