To achieve perfectly wilted spinach that retains its vibrant green color and nutritional benefits, start by washing the spinach leaves thoroughly to remove any dirt or grit. Use a salad spinner to dry them gently. Then, heat a tablespoon of olive oil or butter in a large skillet over medium heat. Once the oil is hot, add the spinach, stirring continuously for about 2-3 minutes. The goal is to just wilt the leaves, maintaining their bright color and preventing them from becoming mushy. For added flavor, consider tossing in minced garlic during the last minute of cooking. This not only enhances the taste but also infuses the spinach with aromatic goodness.

Ingredients

2 large zucchini, cut into long, thin strips

2 cups fresh spinach, washed and coarsely chopped

1 cup shredded mozzarella cheese

1 cup crumbled feta cheese

4 large whole wheat or spinach tortillas

2 tablespoons olive oil

1 teaspoon garlic powder

Salt and black pepper to taste

1 teaspoon red pepper flakes (optional for added spice)

Fresh basil leaves for garnish (optional)

Instructions

Prepare the Zucchini:

    - Begin by preheating a grill pan or outdoor grill to medium heat.

      - In a mixing bowl, combine the zucchini strips with 1 tablespoon of olive oil, garlic powder, salt, black pepper, and red pepper flakes if you enjoy a bit of heat.

        - Place the zucchini slices on the grill and cook for roughly 3-4 minutes per side, until they are tender and have nice grill marks. Once done, remove them from the grill and set aside.

          Sauté the Spinach:

            - In a medium skillet set over medium heat, pour in the remaining tablespoon of olive oil.

              - Add the chopped spinach to the skillet and sauté for approximately 2-3 minutes, just until it is wilted but still vibrant in color. Remove from heat and mix the sautéed spinach with the grilled zucchini for an even filling.

                Assemble the Wraps:

                  - Place a tortilla flat on a clean surface or cutting board. Begin by sprinkling 1/4 cup of shredded mozzarella cheese on one half of the tortilla.

                    - Layer on a generous portion of the zucchini and spinach mixture, followed by 1/4 cup of crumbled feta cheese. Next, fold the tortilla in half to encase the filling tightly.

                      Grill the Wraps:

                        - If needed, lightly grease the grill pan with a touch of olive oil to prevent sticking.

                          - Carefully place the folded wrap onto the hot grill pan and cook for about 3-5 minutes on each side or until the tortilla turns golden brown and the cheese inside has melted to perfection.

                            - Once grilled, repeat the process with the remaining tortillas and filling.

                              Serve:

                                - After grilling, slice each wrap into halves or quarters for easy serving.

                                  - If desired, garnish with fresh basil leaves for an aromatic touch. Enjoy warm, with a side of marinara sauce or your favorite dipping sauce for an elevated experience.
